We held our monthly Intimate Chef’s Series at Fante’s Coffee on October 30th and featured Chef Lee Mayfield. We had originally planned to host Chef Loreal Gavin, however, due to a personal emergency, she was unable to attend. Lee stepped in on short notice and came through with a fantastic dish and, on an even cooler note, was able to have a very in-depth conversation with the guests due to his experience in the U.S. Marines.
It was very warming to experience this in such a public setting.
In our opinion, it’s exactly what our world needs more of and the exact type of thing that we want with this series.
So we’ve invited Lee back for our 3rd installment on November 27th to give him a better chance to showcase what he can do.
Here is his recipe from the October 30th:
Oat cakes:
-4 cups self rising flour-1 cup powdered sugar-1 cup cooked steel cut oats– soy milk (about 1 quart, look for batter consistency)Mix all ingridents except oats until no lumps remain. Add oat and blend until well mixed together. Cook at med heat for 2 mins on each side.Apple carmel:-3 apples diced (golden delicious or gala)– 1/4 pound unslated butter-1 cup brown sugar-1 tsp vanilla extract– 1/2 tsp cinnamon– 1/2 cup heavy creamAdd half of the butter to skillet on med high heat and melt. Add apples and cook until tender. Add sugar and cook until all sugar dessolved. Add vanilla and cinnamon. Add cream and bring back to hot(do not boil). Turn off heat and add rest of butter. Stir until mixed.
