From a 5 story mural of Muhammad Ali in Louisville by Shepard Fairey captured by photographer Jon Furlong and brought together by Eddie Donaldson (see 'The Magic Behind The Mural' on page 36) to a fairytale written by a nonverbal actress & model with cerebral palsy in New Jersey (Jessica Frew) that's brought to life through the artwork of an illustrator in Ecuador with brittle bones disease (Gustavo Vera) and produced by AwareNow (see 'The Nonverbal Princess' on page 108), the stories shared in this issue will make you pause, make you think and make you feel things you may not have felt before. Yesterday was Kentucky Derby Day!
But it was also Coronation Day!  
Too many good breakfast themes at once.

  So this is a belated Derby breakfast that takes inspiration from the home of the derby Louisville, KY and their signature dish:
The Louisville Hot Brown.  

A Hot Brown is an open-faced Hot Turkey Sandwich with Bacon & Tomato, covered in Mornay sauce and deliciousness.  

Originally created at the Brown Hotel in Louisville, Kentucky, by Chef Fred K. Schmidt in the pre-depression 1920’s to feed illicitly (it was Prohibition) cocktail soaked guests in the wee hours of the morning.

  I think it would have been even better with a nice Mint Julep and a big flouncy hat.

And now a short plea.

If you’re a horse lover, and care about what happens to thoroughbreds whose racing careers have come to an end, check out the @oldfriendsequine “Old Friends” thoroughbred retirement facility.

My old friend works there. Once you see the good work they do, if you’re so inclined, send a few bucks for some oats.
